This is a blend of 85 percent glera grapes and 15 percent \u201cDOC admitted grapes,\u201d meaning grape varieties allowed by the ruling body of wine matters in the country. Those admitted grapes, in case you\u2019re curious, include verdiso, bianchetta trevigiana, perera, chardonnay, pinot bianco, pinot grigio and pinot noir, the latter vinified white. The Corvezzo Extra Dry Prosecco displays a very pale, almost colorless but silvery robe animated by a fount of medium-sized bubbles; aromas of green apple and pear, almond blossom and acacia flower are encompassed in a steely, limestone effect; these elements segue seamlessly to the palate, where the wine delivers what I think of as Prosecco\u2019s defining virtue \u2014 a texture that\u2019s taut and crisp while simultaneously feeling soft and cloud-like; there\u2019s nothing else like it in the world of sparkling wine.
