What do you mean you’re not a devoted lover of Cabernet Sauvignon, have you no shame? Surely you know that Cabernet is widely considered the king of red wines.

This varietal produces big, bold, intensely flavored wines with amazing concentration. Because of its hearty nature, Cabernet often grows well in multiple soil and climate conditions. In fact, most of the world’s wine regions grow some Cabernet. Dark blue in color these grapes are small in size, but yield powerful flavors backed by substantial tannins. The result is a flavorful red wine that typically ages well. Best of all, you should have no trouble finding an excellent bottle of Cabernet locally.

Cabernet became internationally recognized through its prominence in Bordeaux, France, where it is often blended with Merlot and Cabernet Franc. Additionally, California, Washington state, Australia’s Barossa region and Chile’s Maipo Valley are equally well-known for producing marvelous Cabernet.

One of the most noted traits of Cabernet Sauvignon is its affinity for oak, either during fermentation or in barrel aging. In addition to having a softening effect on the grape’s naturally high tannins, the unique wood flavors of vanilla and spice complement the fruit.

Cabernet’s bold and assertive nature does however have the potential to overwhelm light and delicate dishes. The high tannin content as well as the oak influences and alcohol levels play an important role as to how well the wine complements certain foods. With that said, Cabernet often pairs nicely with sirloin, hamburger, pork or pizza, as well as chicken, salmon and swordfish.

Prices can range anywhere from $12 a bottle to more than $300. In fact, many of the higher-tier wines have developed a very loyal consumer base.

For about $18 the Louis Martini, 2016 Sonoma County Cabernet is wonderful. This wine boasts perfect balance, supple tannins, and notes of blackcurrant, cocoa and caramelized oak. Pairs well with red and white meat dishes.

Penfolds, 2016 Max’s Cabernet from Australia is another example of Cabernet’s appeal. Ripe dark fruit flavors along with hints of cinnamon on the palate with a touch of vanilla and oak. The smooth, silky tannins add balance and length to the wine. $22

Conch y Toro, 2017 Marques de Casa Concha Cabernet, Chile. Dark ruby red in color with luscious aromas of cherry and blackberries intertwined with cedar and smoke. Deeply concentrated flavors with firm tannins and a soft, silky texture. $24

Tamarack Cellars, 2015 Cabernet Sauvignon, Washington state. Vibrant aromas of blackberry and black currant with hints of sage. On the palate, condensed ripe fruit flavors along with notes of understated cedar and dark chocolate. $33

Robert Mondavi, 2016 “To Kalon Vineyard” Reserve Cabernet. An iconic wine by a man who was one of California’s true wine-making pioneers. Deep purple in color with abundant black cherry and plum flavors. Full bodied with vanilla bean, toasted almonds and hints of spice. The long persistent finish that coats the palate is a hallmark of this wine. $175

Chappellet, 2016 “Pritchard Hill” Cabernet. Now this is a textbook example of what a marvelous California Cabernet should be.The Chappellet “Pritchard Hill” is a wine that every Cabernet lover yearns for. Deep violet in color with amazing aromas of blueberry, blackberry and chocolate mocha. Ripe flavors of cherry and dark fruit tantalize the palate with wonderful symmetry. The long, persistent finish is accented by toasty oak. This wine is simply exquisite. SRP $235

Wine Of The Week: Domaine Bousquet: 2017 Gaia Red Blend, Argentina. Deep purple in color, with intense aromas of blackberries and mocha. Dark red fruit flavors coat the palate along with layers of silky, smooth tannins. $18
